fundraising dinner 'Chefs for Unicef' hosted at the Fairmont Algonquin Hotel in St. Andrews, NB.
this year it was again a plated dinner- 7 courses stong, featuring delicious dishes created by 7 renown restaurants and culinary colleges from Moncton, Saint John, Fredericton and St. Andrews.
Markus worked on two dishes this year, representing Europa Inn with a spiced pumpkin sorbet on
florentine chip
and as the culinary instructor of the Community College St. Andrews him and his culinary students plated the vegetarian course:
Panko encrusted eggplant, spaetzle cake, trio of exotic mushrooms, red & yellow pepper emulsion and parsley oil.
on the renovation end of things: the guys are still digging and chopping out the pool with jack hammers, hopefully mid week we can pour the first concrete.
